Chateau Ste. Michelle
This is the top wine of the new year. It was made in 1994 by Chardonnay Columbia Valley Cold Creek Vineyard and is currently in its peak of perfection. It is a Washington white wine and has a citrus flavor that is crisp and sweet with a long smooth lead into a juicy finish. Only 2,500 cases of this beauty were made and at $25 a POP they are going fast. Pick up a bottle tonight and enjoy with a lovely filet of salmon.

CREME BRULÉE
2 cups heavy cream
5 eggs
5 tbls granulated sugar
1/4 tsp vanilla extract
1 cup sifted light-brown sugar
Put the cream into the top of a double broiler, over hot water, and heat until film forms over the surface. In a bowl, beat eggs, granulated sugar, and vanilla. Slowly add cream, beating vigously. Return mixture to the top of the double broiler; cook, over simmering water stirring constantly, until mixture coats a metal spoon. Don't overcook or it will curdle. Pour into 6 souffle dishes or custard cups. Cool slightly. Refrigerate 6 to 8 hours. Before serving, sprinkle with brown sugar and but under the broiler 2 to 3 minutes, or until sugar bubbles. Watch carefully so sugar doesn't burn! Cool and Enjoy!
