Apple Oat Muffins

Prep Time: 15 minutes
Baking Time: 2 minutes
Servings: 12
 
nonstick cooking spray or 12 muffin liners
1 medium apple, chopped fine (1 cup)
1/2 cup orange juice
1/4 cup buttermilk
1/4 cup applesauce
2 egg whites
1 cup all-purpose flour
1/2 cup whole wheat flour
1/2 cup rolled oats
1/2 cup sugar
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/8 teaspoon salt
2 tablespoons sugar
1/4 teaspoon nutmeg

Preheat oven to 400 degrees F. Spray a 12-cup muffin pan with non-stick cooking spray or set out 12 muffin liners on a baking sheet.

In a large measuring cup, combine apple pieces, orange juice, buttermilk, applesauce, and egg whites. Mix well. In a large bowl, combine flours, oats, sugar, baking soda, 1/4 teaspoon cinnamon and salt. Pour orange juice mixture into flour mixture and stir until moistened. Pour batter into cups, filling until 2/3 full. In a small bowl combine 1/4 teaspoon cinnamon and remaining ingredients. Sprinkle evenly over muffin batter. Bake 18-20 minutes or until golden.
