Note on portion sizes: Here is a suggestion that I picked up from JoAnna Lund cookbooks. She does the Healthy Exchange cookbooks. I believe just about all of the recipes can be done in a casserole dish. So put your final product in an oblong or square baking dish, then when you take it out of the oven you can cut it into equal size servings. If the recipe says it makes 8 servings, cut it into 8 pieces before serving, if it says 6 sevings cut it into 6 servings and so on. This is a very quick and easy way to manage portion sizes. Also, if a recipe is for a soup then most all recipes portions is for one cup.
