Mix shortening,butter,and sugar thoroughly. Add eggs and combine thoroughly. Stir in vanilla. Sift dry ingredients together and stir into creamed mixture. Drop small amounts onto a cookie sheet dusted lightly with flour. Sprinkle with small cinnamon candy hearts or red sugar or candy sprinkles.Bake for 8 mins. or until browned. 400 degree oven. Makes about 5 dozen. | ||||||||||

During moms last weeks she could hardly walk, she was so weak,but she went into her kitchen. She made this cake for my youngest daughters(29 yrs.) birthday! That's LOVE!!:o) |

Combine
dry ingredients. In another bowl,cream sugar and oil. Add carrots,beat
in eggs;one at a time. Add to dry ingredients and mix well. Put in oblong greased and floured pan. Bake in 350 degree oven for 35 to 40 minutes. (Frosting recipe next) |

Frosting
8 oz. cream cheese
2 tsp. vanilla 1 box powdered sugar
Nuts if desired(she added) Mix cream cheese and powdered sugar. Add vanilla and nuts. Mix well and use to frost your carrot cake.
Lovingly called peanut butter boulders in our family.Mom couldn't see too well the last few years of her life. She insisted on making these for all of us at Christmas. They were always the size of golfballs!:o) We all loved them! And her for making them. ~smile~
Peanut Butter Boulders
1 lb. oleo
1 lrg.pkg.choc.chips 2 lbs. peanut butter
2/3 square parrafin 3 lbs.powdered sugar
Mix together oleo ,p.butter, and pwdrd.sugar. Roll into small balls,refrigerate overnight. Next day: Melt together the choc.chips and the paraffin. Dip each ball into choc.mixture. She coated about 3/4 of the way up,using a toothpick to pick up and dip. Mom's Easy Spaghetti Sauce
1 jar chili sauce
1 1/2# ground beef
1 onion
1 green pepper
4 shakes garlic salt
1 large can tomatoes
1 pkg spaghetti(mom used med sized)
a dash of worcestershire sauce
Chop onion & peppers. Brown in about 3 tsp.oleo
Brown meat. Drain. Add remaining ings.(except spaghetti)
Cook over low heat 3 to 4 hours.
When done,cook spaghetti & add to sauce.
May also put in crock-pot.
Mom made her own chili sauce.
If i ever find the recipe for it, i'll post it. Enjoy!
5/23/99 UPDATE!!
Chili Sauce
2/3 cup white onions,chopped
1 1/2 cups sugar
1 teaspoon nutmeg
3/4 teaspoon Tabasco Sauce
1/2 teaspoon curry powder
2 cups vinegar
5 teaspoons salt
2 teaspoons ginger
1/2 teaspoon cinnamon
1 teaspoon mustard
Put tomatoes and onions through food chopper.
Add all other ingredients and boil for 2 hours.,
or until thick,stirring frequently to prevent scorching.
Pour into sterilized Kerr Jars to within 1/2" of top.
Put on cap,screw band firmly tight.
Process in boiling water bath for 7 minutes.
Yield: 5-6 pints
This is my mothers chili sauce recipe.
I have never made it myself.
I'd check into that boiling water bath method to be sure.
Hers always was great though. :-) Enjoy!
Update....An Old Memory to Share..
Hi,
I'm not sure i want to embarrass myself this much but here goes...
I was 20 years old. I had just been married awhile.
My husband and i moved to the country.
We had cherry trees right down our lane.
I decided to really surprise my husband when he got home from work and bake him a cherry pie!
I had never even seen it done;so i improvised and made it up! :-)
Luck had it my mom and dad came to see up that evening.
My husband said why don't you serve up some of that pie?
I went in and got it.My mom took a bite and yelled "Ouch".
What's in here? I had neglected to take out the pits!
Who knew those things had pits?:-)
Mom's pie never had any! LOL! Is my face red?
This still remains a special memory to me.
10/20/99 UPDATE!! New Recipe..
Porcupines
1 1/2 #ground beef
1/2 cup uncooked minute rice
1/2 #ground sausage
1/2 cup chopped onion
salt & pepper to taste
1 large can V-8 juice
Mix together all but v-8. Form into large balls.
Space in a 9x13 inch pan and pour V-8 juice over them.
Bake for 2 hours at 350 degrees.
Mom used to wilt large cabbage leaves,
then wrap them around the meatballs.
Secure with toothpicks.
I didn't do this as my family didn't like the cabbage.
Personally, I thought they were better mom's way!8^)
