Ode to a Grecian Web Page
Yasou!
Welcome to my Greek web page, dedicated to my mother, who was born in Athens, Greece. I have been to Greece twice, once as a child, and once as an adult. It is a beautiful country, full of history and magnificent works of art, such as the Acropolis. And many of our relatives still live there, some near Athens, and others on the island of Poros. I have a few pictures of our trip, a little Greek bouzouki music, and a few recipes, for now. But I will soon add more recipes and links. I will eventually add my Greek genealogy, the Kavarlingos (Kavarlingou) and Marinou families from Ikaria and Zakinthos. Hope you enjoy your visit, and may it encourage you to make your own trip to Greece.

My Favorite Greek recipes
Tsatsiki
2lbs yogurt (hung up in a cheese cloth to drain for about 4 hours, in the fridge) 1 English cucumber, peeled, grated and squeezed dry at least 5 cloves of garlic (you can never have too much garlic!), chopped finely two tablespoons extra virgin olive oil salt and pepper, to taste
Add all ingredients together. Let sit overnight in the fridge for the flavors to meld. Serve with souvlakia, greek salad, pita bread, or with chips. MMMMM!!!! But watch out, your friends will definitely know you ate garlic!!!!
Greek Salad
1 English cucumber, peeled and sliced 2 large ripe tomatoes, halved, then quartered 1 small red onion, sliced thin 1/4 cup extra virgin olive oil 2 tbsp vinegar (red wine or balsamic) 1/2 tsp oregano salt and pepper crumbled feta cheese (as much as you want) Combine all ingredients, top with the feta cheese. Serve with a loaf of sourdough bread. Enjoy!!!
