No mean woman can bake well
for it calls for a light head, a generous spirit and a large heart.

Okay, I'll be the first to admit that I'm no chef, fast and easy dinners are my middle name. But I do enjoy baking and love trying out new recipes. Below are just a few of my favorites. Hope you find one you want to try and enjoy it!

Bacardi Rum Cake


Cake
1 cup chopped pecans or walnuts
1 18-1/2 oz. pkg. yellow cake mix
1 3-3/4 oz. pkg. instant vanilla pudding mix
4 eggs
1/2 cup cold water
1/2 cup Wesson oil
1/2 cup Bacardi dark rum (80 proof)

Glaze
1/2 lb. butter
1/4 cup water
1 cup granulated sugar
1/2 cup Bacardi dark rum (80 proof)


Preheat oven to 325 deg.F. Grease and flour 10" tube or 12-cup Bundt pan. Sprinkle nuts over bottom of pan. Mix all cake ingredients together. Pour batter over nuts. Bake one hour. Cool. Invert on serving plate. Prick top. Drizzle and smooth glaze evenly over top and sides. Allow cake to absorb glaze. Repeat till glaze is used up.

For glaze, melt butter in saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat. Stir in rum.


Double Fudge Saucepan Brownies


2/3 cup flour
1/4 tsp. baking soda
1/4 tsp. salt
1/2 cup sugar
2 tbsp. butter or margarine
2 tbsp. water
2 cups (12 oz.) Hershey's semi-sweet chocolate chips
2 eggs, slightly beaten
1 tsp. vanilla extract
1/2 cup nuts, optional

Heat oven to 325 deg.F. Grease a 9-inch square baking pan. In bowl, stir together flour, baking soda and salt. In medium saucepan, combine sugar, butter and water. Cook over low heat, stirring constantly, until mixture comes to a boil. Remove from heat; immediately add one cup chocolate chips, stirring until melted. Stir in eggs and vanilla until blended. Gradually add flour mixture, blending well. Stir in remaining one cup of chips and nuts, if desired. Pour batter into prepared pan. Bake 25-30 minutes or until brownies begin to pull away from sides of pan. Cool completely in pan or wire rack. Cut into squares. Makes about 1 1/2 dozen brownies.


Brown Bottom Cupcakes


1 8 oz. pkg. cream cheese
1/3 cup sugar
1 egg
1 small bag chocolate chips


Cream together, stir in chocolate chips. Set aside.

Mix together:
1 & 1/2 cup flour
1 cug sugar
1/3 cup cocoa
1 tsp. baking soda
1/2 tsp. salt
1 cup water
1/3 cup oil
1 tbsp. vinegar
1 tsp. vanilla

Beat until smooth. Fill baking cups 1/2 full. Add heaping tablespoon of cream cheese mixture. Bake at 350 deg. for 30 minutes.
