April 19, 1999 - Tidepool Is This the End of Raw Oysters? Raw Oysters May Be Taken Off the
Plate by FDA Action The Center for Science in the Public Interest is asking the FDA for stricter controls on the sale of raw oysters and shellfish. A petition was filed asking FDA to require that shellfish sold for raw consumption be free of Vibrio vulnificus. This bacteria naturally occurs in all coastal waters of the US, but does not become harmful until the water temperature exceeds 68 degrees F. The Pacific Coast Growers have asked that the matter be referred to the Interstate Shellfish Sanitation conference for continued research before new standards are set for "safe" levels of bacteria and a threshold to trigger a harvest shutdown. Dave's Oyster Fritters
1 pint oysters w/liquor 1 tsp. Baking powder dash "Beau Monde" dash celery seed |
1 cup flour 1/2 tsp. Salt 1/2 tsp. "Old Bay" peanut oil for frying |

Mix all ingredients together in a large bowl. With a large
spoon or ladle, scoop up batter with oysters in each scoop and drop,
"burger-sized", into hot oil (about 1/2" deep). Fry, turning once when
underside is golden. Remove onto brown paper or paper towels for draining. Serve at once. Serves 4-6 |
OYSTERS ROCKEFELLER

1 1/2 pints Oysters |
1/2 teaspoon Celery Salt |
2 cups cooked Spinach |
1/2 teaspoon Salt |
4 tablespoons Onion |
6 drops Tabasco |
2 Bay Leaves |
6 tablespoons Butter |
1 tablespoon Parsley |
1 cup fresh Breadcrumbs |
Place shucked and drained oysters on deep half of shell. Put spinach, onion, bay leaves, & parsley through food processor to chop. Add seasonings to spinach and sauté in butter over medium heat for 5 minutes. Add breadcrumbs and mix. Spread mixture over oysters and bake in 400-degree oven for 10 minutes. Garnish with lemon slices. Oysters may be placed in a casserole instead of shells if so desired. |
