CREME PREPERATION:
In a bowl mix the egg yolks and sugar, beat well. Add cake flour slowly while beating mixture at low speed. Add half the milk and stir slowly . Put the rest of the milk in a sauce pan and heat the milk. Slowly add the egg, sugar mixture to the warm milk and bring to a boil slowly stirring constantly. remove creme from heat . In another bowl, beat mascarpone cheese until creamy, add rum, and then add to creme mixture. Stir well and let cool completely. In another bowl beat the 500 grams of creme into a light whipped creme and mix slowly with above creme mixture. Prepare syrup by bringing to a boil the sugar and water for about 2-3 minutes, cool completely. Take first layer of cake, sprinkle with cool syrup and spread 1/3 of the creme all over.Cover with second layer of cake, sprinkle with syrup and spread 1/3 of the creme, add last layer and sprinkle with syrup and finishing with creme. Refrigerate for 3 hours, before serving sprinkle with cocoa powder generously.
