This is my favourite fat free cake with no added sugar. It has lots of fruit and uses fruit juice in place of sugar.
375 gm fruit medley1
Handful of artificial cherries
1 cup of orange juice
1/4 cup of apple juice
Combine all of the above in a saucepan and bring to the boil. Simmer for 2 minutes then cool. Ideally this should be done the night before to make the cake richer, however it still works quite well even if you only pop it in the fridge for an hour
3/4 cup of grated apple
1 cup of grated butternut pumpkin (butternut squash in the US)
1 and 1/4 cups of wholemeal self-raising flour2
1/4 cup of skim milk powder, or alternately corn flour
1 tablespoon cocoa
1 teaspoon mixed spices, or apple pie spice
2 large egg whites (60gm)
Combine the fruit mixture with the apple and pumpkin in a bowl. Stir in the dry ingredients and the egg whites. It is easier to to this by hand, it's messy but the cake will mix up much easier
Pour the cake mix into a loaf pan and into the oven
It should take between an hour and an hour and a half
Stand on a wire rack and allow to cool before turning over

1A fruit medley is a mixture of different fruits. Normally
something like 1/3 raisons, 1/3 sultanas, 1/3 currants. I sometimes add some
chopped up dried apricots.
2If you don't have wholemeal self-raising flour you can use plain
wholemeal flour and add 1 and 1/2 teaspoons of baking powder.
