1/2 cup of castor sugar
1/2 teaspoon of vanilla essence
1 large egg (60gm)
50gm apple sauce
1 cup self raising flour
2 heaped tablespoons of cocoa powder
1/2 cup of skim milk
1/2 cup of sugar
1 heaped tablespoon of cocoa powder
1 1/2 cups of hot water
Turn on oven and allow it heat to 350F while you prepare the pudding

You can use normal sugar in place of castor sugar if you don't have it
You can use 30gm of butter in place of the apple sauce
The apple sauce should be a puree, no skin or chunks should be present
Mix castor sugar, vanilla and egg in bowl until creamy, about 1 minute
Add apple sauce and beat for another 30 seconds
Add flour, cocoa powder and milk, mix with a fork and then once everything has combined
beat for 1 minute
If you haven't already done so, place mixture in glass, oven-proof, bowl
In a separate bowl mix sugar and cocoa powder with a fork until smooth
Add hot water and mix for 1 minute
Pour sauce over the top of the pudding. Use a knife or fork to spray sauce out, this stops it from creating a pit in the
pudding
Place in oven, should take 35-45 minutes depending on oven
Pierce the pudding with a skewer, if it remains dry, pudding is cooked
Makes 4 large servings, only 1.5gm of fat per serving (that's the eggs fault).
