How Potatoes Changed the World

This document explores the ways potatoes affected four cultures--ancient civilization in the Peruvian Andes, the Irish under the English, the Russians under the tsars, and the United States in the wake of the industrial revolution. I use both historical facts and yummy recipes to create a picture of how people used potatoes in each place.
